Virtual or Hard Disk Storage

I recently built a Windows 2012 R2 Server which I will post to a Cloud service. My question is:

1. I want to kept my data separate from my OS, should I install a virtual disk or a hard disk?

2. Depending on which way I go with the extra storage, how do you get the OS to see the extra storage?
